For making the simple syrup, take 1/4 cup black peppercorns and 1/4 teaspoon of red pepper flakes and roast them for 30 seconds. After letting it cool down, add 1 cup of water and 1 cup of granulated sugar. Let it simmer until the sugar is dissolved.
- 1 oz gin
- 1/2 oz Pear Williams or other pear flavored liqueur
- 1/4 oz fresh pear puree
- 1/2 oz black pepper simple syrup
- add the gin, poire williams, pear puree and simple syrup and ice to a cocktail shaker and shake hard
- Pour this into a champagne glass and add sparkling wine
